My sister may be staying with my husband and me over the Christmas holiday. The problem? My sister is anti-meat. My husband is anti-vegetable. My challenge to you is to give me recipes that I can easily convert to be acceptable for both of them. I don't really want to have to cook two dinners every night, but I want us to be able to eat together. I am not a vegetarian, so I'm unfamiliar with how she eats, and I want her to feel welcome to stay with us. I'm excited to surprise her with menus that accomodate her. Are you up for it? Can you help me?

Joey D- I'm having trouble with your recipes. I tried them all, but the bread+toaster+butter combo is giving me trouble. I can't figure out how to slice it, and it's too big to take a bite of. How do you eat it? :(

This is a lot easier than you might think. I have done this before. You need to think about bases and sauces.

For breakfast I made this french toast recipe. I can't find it any more, but I know how to make it. Get a loaf of Italian bread and slice it about 2" thick. Then cut a slice in the middle of the slice of bread. Don't cut it in half, but don't get crazy trying to to hit the edges. In a bowl mix together some cream cheese, walnuts, a little sugar and cinnamon. You could also just buy honey walnut cream cheese. I just like cinnamon. Then put about 1 - 2 tbsp of this mixture inside your slit bread.

Next mix together your eggs and cream for the custard. Really it's by eye. One thing I will say I like to add a pinch of salt and sugar and a capful of vanilla extract to it. Soak your filled bread in the egg mixture and pour the rest on the top. Make a lot more eggs than you think you'll need. I generally start with 8 for one loaf of bread. One loaf of bread gives me about 6 slices. I know it doesn't make sense, but you want your eggs to really soak in the bread. And believe me you don't want to not have enough egg. Let this sit overnight and sautee in a low pan with a equal mixture of butter and light oil. They will puff slightly when they are ready to be turned over. You can top with syrup, but I like berries (frozen for times sake), serve the man some bacon, ham or sausage.

Quiche is another good option, especially for lunch. I did this and made this basic base for quiche http://allrecipes.com/Recipe/Swiss-Cheese-n-Onion-Quiche/Detail.aspx. I made them in large cupcake pans instead. It took a little more work, but I was able to add sauteed veggies for her and ham for him. It was a great lunch. He ate about 6 of them, but he didn't complan. We ate a few with a nice garden salad.

I also made some fake lasagna. I cooked up a box of almost totally cooked ziti, 1 large jar of sauce. 1 container or ricotta cheese and a half bag of mozz cheese. Bake covered at 350 for about 20 minutes, then top with cheese. My guy didn't know the difference. But if you want to introduce some meat you can cook them in smaller pans.

Another is a mock stoganoff. This probably was the easiest of all. I simply warmed up 1 can of cream of mushroom soup, 1 container of sour cream, 1 pack of mushroom soup mix and about 2 cups of water. He eats mushrooms so I sauteed up 1 contaner of sliced portobello mushrooms and added it to the sauce. She had the sauce on top of egg noodles, I topped ours with a sliced ribeye.

I also made a basic minnestrone soup. For him I added a sliced up sauteed sausage link. It made it a lot more filling for him. Bread and butter, and it was good.

Another thing is don't tell him. He loves eggplant rollatini now, he had no idea what it was. I had chicken parm prepared for him, but he actually ate it. Anything stuffed with ricotta cheese, coved and sauce and ricotta cheese will pass.

Bisquick Coffee Cake Topping . 1/3 of a cup of Bisquick . 1/3 of a cup of brown sugar . ½ of a teaspoon of cinnamon . 2 tablespoons of butter Mix the ingredients in a bowl until crumbly. You'll use this to top the cake recipe below. Easy Bisquick Coffee Cake Recipe . 2 cups of Bisquick . 2 tablespoons of granulated sugar . 1 egg . 2/3 of a cup of water (You can also use milk, if you prefer.) Mix all of the ingredients together, and pour evenly into pan. Now, spread the topping over the batter carefully. Bake for approximately 20 minutes, and remove from oven. Wait for the cake to cool before removing from pan. There you have it. This recipe will take you about 45 minutes to make, including cooking time. It's also inexpensive and tastes great. For something a little bit extra special try the wonderful recipe below. Bisquick Cherry Swirl Coffee Cake Recipe . 4 cups of Bisquick . 1/2 cup of Sugar . 1/4 cup of Melted Butter . 1/2 cup of Milk . 1 teaspoon of Vanilla Extract . 1 teaspoon of Almond Extract . 3 Eggs . 1 can of Cherry Pie Filling (20 ounces) Start by preheating the oven to 350 degrees Fahrenheit. Grease a 15x10 inch jelly roll pan. A couple of 9 inch square pans will also work. Mix all the ingredients together in a mixing bowl, except for the pie filling. Beat continuously for about 30 seconds, until the batter is smooth. Spread about two-thirds of the batter out in the pan(s). Now, spread the pie filling over batter. Try to cover the batter as best you can with the pie filling. Once you have done that, you should spread the rest of batter over the pie fillings. You can put the batter on using a large spoon so that don't disturb the pie filling too much. Allow it to bake for about 20 minutes, until it is light brown. While it is baking you can go ahead and prepare the glaze. Vanilla Coffee Cake Glaze Recipe 1 cup of Powdered Sugar 1 teaspoon Vanilla Extract 2 tablespoons of Milk or Water Mix all the ingredients together and pour over the coffee cake after is has finished baking but while it is still warm.

Spaghetti and meatballs. Don't put the meatballs into the sauce if he wants them he can put them on his.

You can always prepare a main dish of meat and do big veggie salads for her and have warm veggies to, basically what one would serve as a side. Try a 7 layers salad
Take a 9/13 dish, put torn lettuce in the bottom and then layer veggies such as green peppers, red peppers, celery, onions, and whatever. When you get to the top put a bag of frozen peas on it. Mix 2 cups of mayo with 1/2 cup of sugar and "frost" the pea layer. Put shredded cheddar cheese over that. Cover tightly and refrigerate overnight.

Do a baked potato bar one night with tons of different toppings, sour cream, cheese, steamed broccoli, seasoned ground beef, bacon bits, and whatever else you can think of. She can make her's veggie and he can eat the meat.

Do the same with taco or burritos, lots of different toppings including beans for her. Let everyone make their own.

You can do a sandwhich bar one night too, use pita bread and have hummus, black beans and bean sprouts for her, ham/turkey/beef for the meat eaters and a variety of condiments.

Grill burgers one night but buy her meatless burgers. YOu'll find tons to choose from in the frozen food aisle

If she eats eggs, you can do a breakfast for dinner one night, scrambled eggs, hash browns, french toast, breakfast meat for the meat people.

Pasta is always a good choice in this case. I'm thinking of spaghetti with pesto, or carbonara, and even a classic amatriciana, even if it has a little bit of bacon or pancetta in it.
A good risotto, and seafood as second course.
I'd also try a good frittata (omelette): it could do it too.
