The reason why they explode is if the shell has already been comprimised somehow. Make sure you don't drop eggs in that have deep lines on the shell. Also, as your getting ready to heat the water, take the eggs out of the refrigerator, and set on counter. Extremely cold eggs, being dropped into boiling water will sometimes make them crack. I boil my water first, then gently put my eggs in. Boil for 5 to 10 minutes, take the eggs out, and put them in ice water. This will help the shell be removed in nice, clean pieces.

The way I have always been taught to hard-cook eggs is this: Put the eggs, making sure they are not cracked to start with, into a small pan just big enough to hold them. Cover with cold water. Bring to a full boil over high heat, then cover the pan and remove from the heat. Let them stand about 25-30 minutes, then pour off the hot water and run cold water over them. Peel if you want to use them right away, otherwise store them still in the shell.

These always come out perfectly and crack in the water only if you started with cracked eggs in the first place.

I know do what Rachel Ray of the Food Network does, which another described.

Put them in the pot with cold water.

Bring them to a full boil, then take them off the stove and cover them.

Let them sit in the hot water for 20 minutes.

This also keeps them from getting rubbery.

You need to place them in teh water genrly, do not bring to a rolling boil, which causes the eggs to rock and move and bump and crack.
