Meatloaf. Meat balls. Chili. Sloppy Joes.
Or sauté it (maybe with a little chopped onion and garlic), add cream of mushroom soup, adjust flavorings (and salt and pepper to taste), and serve it over egg noodles.
Sort of a quick beef romanoff/stroganoff or whatever.
It's good over rice, too.
My kids love it.
Also: hamburger soup. I had a good recipe which I unfortunately misplaced, but there are others on the Internet.

I come from a W. Indian background and we ate this a lot when I was a kid and my parent were broke. Then I went to a friends house and find they made something similar.
In a pan soften 1 diced onion and 1/2 pepper with some seasoning salt. Then add your meat and let brown up. Squirt on about 1/4 c. ketchup and cover the meat with some water. Add a little more seasoning salt and a sprig of thyme. Let this simmer until it becomes quite thick. Maybe 20 minutes. We always had it over rice, but my friends family ate it on a bun.
Because I have been on a low carb frenze like everyone else I have this other recipe. Of course you can top pasta with it, but it's pretty filling. Again, sauteed peppers and onions, but this time add garlic. Add to your meat with 1 egg, salt and pepper. Then cut a chunk of mozz cheese, maybe 1/4" squared and wrap the meat tightly around it. Not a lot of meat. You want them to be about the size of a mini golf ball. Bake at 350 for about 25 minutes. I like them dipped in a tomato sauce plain, but you can put them on pasta. Or, they would be good on a sub roll too. I have a few in the oven, thanks for the thought.

When I am sick of eating ground beef, this is what I do (salisbury steak florentine):
I cook a package of frozen chopped spinach then I drain it well (squeeze it).
I stir it into a pound of ground beef, with some garlic powder, onion powder, thyme, black pepper and worcestershire sauce. (I don't use salt...the worcestershire sauce is too salty as it is).
I make patties out of the mixture, brown them quickly over high heat, then pour beef gravy and a small finely chopped tomato over them and let them simmer on low heat for 1/2 hour. You could add 1/4 cup wine if you like, but it isn't necessary.

I always make this: I take a package of crescent rolls and lay half of them out flat on a cookie sheet. Then take your ground beef (cook it before) and put it on top of the crescent rolls. Sprinkle some cheese on top. Then fold a crescent roll over it. Make sure all the fillings are covered. Bake them until golden.
