Before the destruction of the Jewish temple in 70 A.D. Most are verifiable to with in thirty years of Jesus' crucifixion. The fact that ancient texts survived time and persecution is remarkable.

Matthew: The various dates most widely held as possible writing dates of the Gospel are between A.D. 40 - 140. But Ignatius died around 115 A.D. and he quoted Matthew. Therefore Matthew had to be written before he died. Nevertheless, it is generally believed that Matthew was written before A.D. 70 and as early as A.D. 50.
Mark: Mark (the disciple of Peter received his information from Peter) is said to be the earliest gospel with an authorship of between A.D. 55 to A.D. 70.
Luke: Luke was written before the book of Acts and Acts does not mention "Nero's persecution of the Christians in A.D. 64 or the deaths of James (A.D. 62), Paul (A.D. 64), and Peter (A.D. 65)."8 Therefore, we can conclude that Luke was written before A.D. 62.
John: The John Rylands papyrus fragment 52 of John's gospel dated in the year 125-135 contains portions of John 18, verses 31-33,37-38. This fragment was found in Egypt. It is the last of the gospels and appears to have been written in the 80's to 90's.

The Gospels were written 30 to 50 years after the ascension of Jesus into Heaven. The letters of Paul were written shortly after Jesus' ascension.
All of the religious writings were studied and the fist Bible was put together in the 4th Century. In the 16th century, Protestant "Reformers" removed 7 books from the Old Testament.

The best that scholars have come up with so far is about 20 years to 120 years for the gospels. The rest was written over the next 200 years. Emperor Constantine put a counsel together in 325 to vote on what was to be included in the bible. They rejected about 80% of what was available. The next emperor tried to destroy everything in about 400 and a Bishop in about 800 decided he was going to start his own religion, translated the greek version of the bible into latin, declaired himself pope and created the roman catholic religion. Your present bible is the many times re-written and re-translated version of that. That is 800 years of history in a couple of sentences and it might even be accurate.

The New Testament as we know it was assembled by the end of the 4th century, although all of the books comprising it pre-existed that. The earliest extant Gospels date to the end of the 2nd century. There is no credible evidence of Christianity existing prior to the fall of the temple in 70 CE (the blurb in Josephus is a known fraud).
It appears to me, that Jewish dispensationalists revolted against Rome because of the new age of Pisces - which had been previously calculated to be the time period when the messiah would appear. Rome reacted predictably and attempted to destroy them, and Christianity was born out of the ashes.

Acts of the Apostles - before 67 AD
Epistles of Peter - before 67 AD
Gospel of John - before 90 AD
Epistles of John - before 90 AD
Gospel of Luke - probably around 60 AD
Gospel of Matthew - around 50 AD give or take 5 years
Gospel of Mark - 40-45 AD
Letters of Paul - between 40 AD and 67 AD, but generally earlier than the gospels
Here's how you know this:
1. Peter and Paul were both executed in Rome in 67 AD, so naturally all their writing was before this time.
2. Luke, who wrote Acts, did not include the martyrdom of Peter or Paul so when he wrote it, they were still living, so you know the Acts was written prior to 67AD
3. You know Acts came after Luke's gospel, so the gospel of Luke came sometime around or before 60 AD
4. In the gospel of Luke we read that other gospels were already written and he investigated everything from eyewitnesses, so you know the gospels of Matthew and Mark precede 60 AD
5. It has generally always been accepted that Paul write his epistles before the gospels were written, so they would have been written around 45 AD or so
6. The earliest existing fragment of the New Testament is a portion of the gospel of John and dates as early as 92 AD, and since we do not think the fragment is from the very hand of John but probably a copy, John's gospel precedes that date. Its ironic that the oldest fragment is from the gospel of John since 'scholars' have always said he wrote his gospel last and some have even said the gospel of John was not made up until 300 AD, but here we have a fragment of John in the first century. So since you know his gospel was the LAST one written, you know all the others were written much earlier than 90 AD, and since Paul and Peter were killed within 30 years of the crucifixion, you know their writings were even earlier. And you know Luke's writings (gospel and Acts) were written before then because Peter and Paul are still alive at the end of Acts. And you know Luke's gospel was written after Matthew and Mark because Luke says so.

It wasn't apostles, but Catholic bishops who collected the many writings considered God inspired and then picked which they thought were true writings of God and made a book. This happened a few hundred years after Jesus was said to be on the earth.
