I'm writing some fiction about a situation involving police, and I'm curious how this would work:

If police made an arrest, what would/should their response be if some bystander from the crowd steps forward and starts mouthing off to them about the arrest? Specifically, if the police officer is going by the book and being a professional about the situation, how should they respond to a protester in the crowd who has stepped forward to get in their face?

He'll tell them to step back in whatever tone and volume of voice is needed at that time.

If the person refuses and stays there, "in his face", the person would be arrested for obstruction of justice. Any resistance to that legal arrest would be met with the necessary amount of force required to effect an arrest.

At least that's how I always do it.

Normally, the person stepping in will be told to get back. If they insist on getting involved, they will most likely be arrested for Interferring or Hampering an officer in the line of duty.

Calmly and cooly arrest them also for interfering with police business.

I'm all for protesting and I believe the police have a duty to arrest unruly protesters, but neither has a right to be abusive.

A police officer is there for peace keeping and not for any form of fighting, and to also protect them for destroying things as they are protesting.

I imagine the officer just asks them to step back. If they do not comply... off to jail they go to sit and think about how stupid they are for not listening the first place.

How far in their face?

If it's just yelling, the cops should ignore them like everyone else does.

If they physically get in the cop's way or try to touch them, they should get clubbed over the head.

And then arrested, too.

I usually ignore them unless they get too close. then they get warned ONCE to get back. if they don't, they go to jail too.
