Things to always have on hand:
Canned tuna
Spaghetti makings (noodles, sauce stuff)
Boneless, skinless chicken breast
Frozen veggies
Carrot nubs (some places call them baby carrots)
For a grocery list, I like to make up a menu for the week, that way I know what to buy. You might even try one for your breakfasts and lunches if you eat your meals at work. It saves time and money! I'm not vegetarian, so my menu's pretty flexible. I try for balanced meals each night - a meat, a starch and two vegetable servings. Some nights we have baked potatoes or salad as a meal.
Non-food items would be cleaning supplies - laundry, dishes, bathroom, etc. Paper goods like paper towels or napkins, nose tissues. If you have pets, they obviously need food or cleaning supplies (litter, shampoo). Your personal hygiene products.
Oh, and don't forget the condiments, spices and dry goods for baking. You probably won't need to buy these that often, but it's good to have flour, sugar, salt, pepper and the like in the kitchen.

A bag or 2 of prepared salads, the you will get your "greens" every day. You should 2-3 salad dressings in your fridge. I live alone too and always have canned tuna, salmon or ham flakes in the cupboard, plus a few varieties of pasta. Rice is handy, goes with many things. Tea and coffee are a given if you like them. Boxes of broth, canned diced tomatoes, etc. so that you can make soup. Celery and onions are a must as well. Hope this helps.
