I was thinking an Australian Shiraz. Any hunters or wild game consumers out there who can help me out on this?

There's a sparkling shiraz called Vixen, I think it may be a dollar or two more than your price range, though I think it will pair nicely with venison.

You'll know it by the gold fox on the label.

I would recommend a good Syrah/Shiraz or a Chambourcin.
