This soup is too good. The recipie is large because of the baches we use. Enjoy:
Oyster Artichoke Soup.
1lb Unsalted Butter
1Qt Celery Diced.
1 tbsp Chopped Garlic
1Qt Diced Green Onions
1 #10 Can Artichoke Hearts
1 Gal Oysters
2 Tbsp Chopped Basil
1/2 Tsp White Pepper
2 Tbsp Chix Base
2 oz Tabasco
2 Cups White wine
2 Cups Flour
1 Tsp Chopped Thyme
2 Qts Heavy Cream
2 Qts Half & half
2 Qts Water
Salt to Taste.
Method
1.Cut Vegetables, 1/4Inch Dice, & Sweat in Butter.
2.Add flour to make roux.
3.Degaze with White wine & Chix Base,Stir Smooth.
4.Heat Rest of Liquid & Hearts, Add to Roux Mix.
5.Finsh with Oysters, Herbs & Green Onions.

This is one of my husbands (and mine) favorite way to have oysters.
Scalloped Oysters
1 pint oysters (including the liquid)
1 sleeve saltine crackers, crushed
1/2 cup melted butter or margarine
3/4 cup milk or half and half
1/2 teaspoon Worcestershire sauce
salt and pepper to taste
(cold butter or margarine for top)
Mix everything together and pour into a buttered casserole dish. Dot the top with bits of butter (or margarine) and bake at 350 degrees for 30 to 45 minutes, until heated through and lightly browned on top.
Note: You can use a couple 8 oz. cans of oysters with their liquid instead of fresh oysters if you can't get ahold of the fresh ones.

ohhh i work at an oyster bar... i have all thier recipes... oyster stew, rockefeller, oysters brie, oyster crab dip, oster jambalaya....email me if you want some of them...... too long to copy and paste i will get a thumbs down for sure!!!
