I was wondering if starch is ok to thicken stuff up, it's used in pudding after all. I don't have access to gelatin so please don't suggest that.

you can add starch that's nice! but I recommend for a more authentic finish, use half raw apples and half cooked, and add a teaspoon of flour sprinkled on the raw apple just before filling the pie. That way any liquid from them will turn into saucy goodness.. Good luck .

I always use this for my apple pie filling:

3-4 cups peeled thinly sliced apples
2 tablespoons lemon juice
1 cup sugar
1 tablespoon cinnamon
1/2 teaspoon cloves
1/4 teaspoon ginger
3 tablespoons cornstarch

Whisk the sugar, spices and cornstach together in a bowl. It might seem weird to whisk dry ingredients but it works.

Mix apples with lemon juice as you add the to a different bowl. Then mix the two together. Bake for at least an hour. The most important step is to let it sit at least 45 minutes before you cut into it.

Pie filling: 5 peeled cored and sliced Golden Delicious apples, 1/4 cup sugar, tablespoon of flour and a pinch of cinnamon. Dot with butter.

To answer the question, yes you can use cornstarch to thicken the filling. I wouldn't use as much as was suggested, maybe 1 1/2 teaspoon, then if its' not thick enough, t hen increase.

I normally use flour as the thickener in my apple pies, but some people use cornstarch. It probably needs 2 or 3 Tbs. (same as flour in my recipe). Amount is determined by the type(s) of apples you're using.

when i bake an apple pie i use fresh apples, a little sugar and i mix cinnamon with cornstarch and toss with the apples before putting the apples in the pie crust it turns out great.

Instead of cornflour why dont you use custard powder?
Tastes much nicer. I use it when I want a quick pie.
Open up a can of desired fruit, strain liquid int a pot ,heat, thicken with custard powder, add to fruit, add spices &/or sugar. Make pie. Voila!

You should always mix in a few tablespoons of flour with the apple mixture before putting it in the pie shell and baking it.

You should be using flour in your apple pies. You toss your apples wedges in a mix of flour, sugar, and cinnamon then put them in the pie shell.

that's going to soak up interior the pie crust and the crust should not be as crusty as a crust might desire to be. i like crusty crust on my pie. A pie with no crust isn't a pie, and a pie with no crusty crust is pudding. solid success with that pie!
