Tell them you are young and then challenge them. Ask your parents if they knew exactly what they liked at your age, and had all the answers and never changed their mind. If you learn how to argue correctly, you will never lose.

If you want an electric guitar, you need to prove that you will stick with it. Giving up gymnastics and piano lessons is a good way to tell your parents that you don't appreciate anything they do for you and that the sacrifices they make to provide you with opportunities are worthless because you will discard opportunities and move on when it suits you.
This is not a good precedent.
If you want an electric guitar, why don't you buy a cheap acoustic guitar, borrow a book from the library, and learn to play that. If you can keep it up for a month, then you can raise the issue with your parents. They probably don't want to spend a large amount of money on something you will grow tired of in 5 minutes.
Your parents probably work very hard for their money and love you very much. They just want what is best for you, and believe me, learning to stick with things even when you aren't enjoying them is an important skill they will want you to learn. Prove to them that you appreciate their efforts, and perhaps they will relent.

Well, you have already proven to your parents that you can't stick with anything.
What are you interested in? What do you think about on a regular basis?
Obviously not gymnastics, and maybe not music. (You quit piano lessons).
If you really want an electric guitar, get a job, save up, and go buy one.
If you can't or won't do that then it's a fleeting fantasy.
Think about what you REALLY want to do. If that includes an electric guitar, you'll find a way to get one.

Why have you given up on gymnastics, & piano, etc?
Why would your parents want to go to the expence of an electric guitar for you, just to have you give up on that too?
If you can't convince me (a total stranger) then how do you expect to be able to convince your parents?

OMG.....your parents are not allowing your personal and artist growth to come into play. Why have they made you to give up gym and piano? Being part of music especially is so important in your artistic needs. Electric guitar is noisy, but there are amps out there that are not big and bad, allowing you to play and learn. Just talk to them.........you didn't say your age......I wish my kids had been more interested in music. Shows a cool side of a person. Good luck!

if you already gave up gymnastics, piano lessons and everything else that they paid for, what on earth could you say or do to convince them this isn't another one of your impulses.
Try buying your own. That should demonstrate to them that you are serious.

if you truly believe you will dedicate yourself instead of just wasting money for no good reason, then your parents should support you. That is a problem if they don't believe that you could quite possibly be very talented and just have not yet found your true calling. Music is a powerful thing and there is nothing better (besides Christ) to dedicate your life to!

Tell them kids that study music have a greater understanding of math and get better math grades. Why did you have to give up your other activities?

tell them this is something you seriously want to do and consider actually following it through this time if you have ended many other thing before then you need to prove to them that yo won stop this yo are actually commited.. they are saying no based on your past behavior
