I am well known for my cheese cakes so I will share:
9" spring form pan, Place a oven proof glass dish with water in it into your oven on the bottom rack preheat oven to 425 degrees
Make graham cracker crust according to the box ( but do NOT bake it), press into the bottom and up the sides of the pan
Cream together 4 8oz pkgs cream cheese and 3/4 cups sugar
Add 4 eggs one at a time mixing each one into the batter before adding the next
add 1 heaping tablespoon of flour, 2 tablespoons of lemon juice and 1 teaspoon of vanilla mix just until everything is incorporated.
Pour batter into spring form pan , Put into oven( on the middle shelf) for 8 min at the 425 temp then turn temp down to 350 degrees, bake for 35 min and then shut off your oven, let stand in the oven for 40 min. When you remove it from the oven run a knife around the edge and let cool at room temp for 10 min before removing the collar on the pan. Let cool slowly at room temp before putting in the fridge ( all of this prevents cracking )
I have tried numerous recipes with other ingredients added ( like sour cream) and am not happy with the results. NY cheese cake is creamy heavy and nice and thick...this recipe turns out like what you would get from a NY deli>>>have fun and good luck

This is my mother-in-laws recipe and probably the best I have ever had.
Ingredients:
Graham Cracker Crust as per directions on Nabisco Graham Gracker Crumb box for a cheesecake or enough for 2 regular pie pans--But be sure to use a springform pan.
Filling:
5 - 8 oz pkg. of cream cheese at room temperature
1&3/4 cup of sugar
3 Tbsp. of flour
1 tsp. of grated lemon rind( I have left this out is not
available)
1 tsp of vanilla
1/4 tsp. of salt.
6 eggs
1/4 cup of heavy whipping cream.
Directions:
Cream cheese in mixer. Add salt, sugar, flour, lemon rind, vanilla and beat well. Pour into prepared pan.
Preheat oven(a must) to 500 degrees. Cook at 500 degrees for 10 minutes(do not open door) and reduce heat to 200 degrees for 65 to 70 min until filling is almost set and golden brown. Remove from oven and cool then chill several hrs or overnight

this is the cheesecake recipe a friend gave me
for every package of cream cheese you have you add one egg and 1/4 cup of sugar
1 pkg cream cheese put 1/4 cup sugar and 1 beaten egg
2 pkg cream cheese put 1/2 cup sugar and 2 beaten eggs and so forth
beat until smooth and creamy and then add 1 tsp vanilla no matter how many pkgs of cream cheese you have. 2 teaspoons lemon zest (the yellow part of the lemon rind)
and a half cup sour cream mix altogether and put into a frozen graham cracker crust. bake in a 350 oven until knife inserted comes out clean. if desired you can put some aluminum foil around the pie pan and put in a pan of water up to about half way and put it in the oven . that way the top wont crack. cool and enjoy if you like chocolate cheese cake add 3 packages of premelted baking chocolate. i have made this one for years and i love it. easy and really good.
