is a sin a sin because you hurt someone else or you did something that could potentially hurt somebody else?
or is it because its against what god said?

I mean I think a sin should be something that hurts somebody else deliberately, not something that goes against his plan. I mean Im pretty sure it wasnt his idea for us to screw up the earth like this.

No, it was not in His plan for us to screw up the earth as it has indeed become. He did, however have a plan for even that. The best description of a sin, I think, is outlined in the Book of the Bible in The Epistle Of James Chapter 4, verse 17 " Therefore, to him that knows to do good and does it not, to him it is sin."
Can't get any plainer than that.
If you want technical-from the hebrew root cha-ta. An actual archery term, to miss, as in a mark or a target. To go astray, to wander.
Which is really interesting because Tor-ah, is the term for "hitting the Mark" and it is also the name of the Old Testament Scriptures. (man I love the hebrew language). So if you wanna make it like, oh your going against what God said, then there is probably no talking to ya'. If you have the heart that syas, instead, Man I really should have done roght by doing this or that, then you are on your way to enlightenment and a strong fellowship with The Almighty God. Why do you think taht David Found so much favor in His Eyes? after all the "wrong" or "sin" that David did in his life, he would humble himself and just get right with God and admit it. No bull, Just saying, Okay God! I just messed that up royally. Please forgive me and help me move on.

A sin is breaking God's law. The Ten commandments. It is only a sin if it goes against what God says.
EDIT: The 10 commandments were given to keep us from harming others. It is a law that was given because God Loves us and wants us to be happy and healthy. If everyone followed the 10 commandments, there would be less people hurt on the earth. Following what God says, should prevent us from harming others.
The other things that God tells us not to do can also be considered a sin because the 10 commandments says "Thou shall have no other God's before me." When we decide to go against what God tells us to do, we are declaring ourselves like God and able to decide what we can and can't do. Many times this is what causes harm to others.

In short, sin is to miss the mark fixed by God, to rebel agains't God or to violate God's law.
The definition of sin can be found in these 4 Scriptures:
1 John 3:4 - Everyone who sins breaks the law; in fact, sin is lawlessness.
1 John 5:17 - All wrongdoing is sin, and there is sin that does not lead to death.
James 4:17 - Anyone, then, who knows the good he ought to do and doesn't do it, sins.
Romans 14:23f - and everything that does not come from faith is sin.

A sin is anything that misses the mark of God's glory..anything that doesn't reflect Him. The criteria of whether or not it hurts someone else cannot determine whether or not something is a sin. Some things may be painful to hear, or can be physically painful, but that doesn't automatically make it a sin.
