I have to make a lot of cupcakes for a lunch function on Tuesday. If I bake them on Sunday night (but wait to ice them on Monday night) will they still be moist by Tuesday lunch? Should I store them in an air-tight container or with the lid loose?

I love baking, but to keep them still nice and soft

put them in a plastic container and cover it with plastic clear wrap

don't refrigerate it! that will harden them

keep them at room temp.

Airtight container in the fridge to slow down the aging process. If air is allowed to stay with them then they will mold and dry out. If you put them in a container with a paper towel, it will soak up any extra moisture while allowing the muffins to remain moist.

The cupcakes will be fine if you keep them in an air tight container. Keep them in a cooler part of your home or freeze them if you have room. The cake tops will be fine to frost Mon. evening...cake really only gets stale quickly on the cut edges.

Think about it people...how many use an entire cake in one day!?!

They should be kept in a air tight container and they should have the small paper used on cupcakes and muffins to keep it warm because air can destroy many types of food.

airtight would slow the process of aging, but they will not be very moist (unless you also wrap them in wet paper towels, but that will only help a little)

if you cant bake them the night before, then try buying them the night before or on the way there

They should be ok.
I know my mom puts a slice or two of bread on a piece of waxed paper with her cookies (in an airtight container) and it works great. I don't know if it will work for cakes though.

Even so, it's less than 48 hours. I think you'll be fine.

Wrap tightly in plastic wrap or a large plastic container with cover. They should be fine. I wuld recommend frosting ASAP (after cooling of course).
