Well, that's tough. I'd check with a local health agent, but your best bet is through an employer's group health policy. See, there are some serious potential side effects from gastric bypass, and most carriers aren't going to want to take that on.

mbrcatz is quite correct. My wife is a practicing gastroenterologist, and she cringes every time someone comes in wanting such surgery. While it's effective in weight loss, it many times causes a host of after procedure problems which can cost an insurer dearly.
You may find insurance with some sort of exclusion for pre-existing, but it's going to not cover a LOT of issues, since nearly anything which goes awry with the gut will probably be excluded from coverage.

try incorporating a 'lien'... I'm not so sure about health insurance but other insurance types put a clause mentioning that claims cannot be made specific to a 'lien'... ex. any complications caused by gastric bypass surgery will not be included in the coverage...
