I mean like food that is cooked.

I've noticed that it doesn't really lose it's flavor, but rather loses it's consistency, or texture, moisture.
Which makes it less tasty.

Yes, if they are fully cooked and you reheat. I make tuna casserole and reheat, no problem. I also make spaghetti, lasagna, pot roast, pork roast, beans and rice, BBQ beans, and reheat all without problems. As for the cream cheese, I can't think of a recipe that I use cream cheese in.

I would think so. Ice forms on it so when it is defrost more water saturates the food which would cause it to lose some of its flavor.

Food will retain its flavor when frozen if 1) it is stored in an air tight container, plastic container, ziplock freezer bag, or heavy freezer paper. 2) it isn't frozen too long...there are charts that tell you how long things should be left frozen,,,,meat 4-6 months, meals 2 months, etc.

Actually it loses its zest more like it.
Things taste better when there freshly eaten.
(I would know my dads a chef and teaches me to cook)

yeah it can but it really depends on the type of food that it is. It will never taste as good as it did when it was fresh.

No, it retains it very well.
I believe even better flavours emerge when it is reheated.

Yes... it can; depending on how fast or long it took to freeze. But not always... normally when you freeze, its preserved the way it is.

no, it just is kinda weird cause its a diff. consistancy or the flav. changes a bit.
