(please ignore my son's avatar) Anyways, I am bringing about 2 dozen cookies for Christmas Eve this year. Does anyone have a good recipe for cookies I can make? Not too complicated, but then again, not just the basic chocolate chip.

CHRISTMAS BUTTER COOKIES
1-1/2 c. confectioners sugar
1 c. margarine
1 egg
1-1/2 tsp. vanilla
2-1/2 c. all-purpose flour
1 tsp. soda
1 tsp. cream of tartar
Cookie decorations


Mix sugar and margarine; add egg and vanilla. Mix thoroughly. Mix flour, soda and cream of tartar; blend. Refrigerate for 2-3 hours. Roll a portion of dough into 1/8-inch thickness; cut into desired shapes. Sprinkle on decorations. Place on lightly greased cookie sheets. Bake at 375 degrees for 7-8 minutes.

These cookies melt in your mouth and are a holiday favorite at my house!

SNOWBALLS

1 cup butter (softened)
2/3 cup powdered sugar
1-1/2 teaspoons vanilla
2-1/4 cups flour
1/4 teaspoon salt
1 cup walnuts (finely chopped)
2 cups powdered sugar (for dusting after baking)

Preheat oven to 400 degrees. Cream butter and 2/3 cup powdered sugar in large mixing bowl. Add vanilla and blend well. Stir in flour, salt and walnuts. Roll dough into 1" balls. Place 1" apart on ungreased cookie sheet. Bake 12 to 14 minutes, or until lightly browned around edges. Cool 2 to 4 minutes, then dust with about 1 cup powdered sugar. Cool completely, then dust again with powdered sugar.

Yield: 4 to 5 Dozen

BISCOTTI - ITALIAN NUT COOKIES

3 lg. eggs
3/4 c. sugar
2 1/2 sticks butter, melted
1 tbsp. orange zest
1 tbsp. vanilla
2 c. flour
1 tsp. baking soda
2/3 c. Hazelnuts
1/3 c. almonds (or 1 c. any nuts)

Beat eggs and sugar. Add butter, zest and vanilla, beat well. Sift flour, soda and add and beat well. Stir in nuts using spoons; divide sticky dough in 1/2. Place each 1/2 on cookie sheet. Shape into flat loaf 10 x 14 inches. Bake 20 minutes or until firm. Cool a few minutes. Cut into 1/2 inch slices and place on sides on cookie sheet. Bake 7 minutes on each side. Cool on rack. Dunk into wine/coffee.

I once offered to bring cookies to a family Christmas party, and then wasted a bunch of time doing everything but baking them. At the last minute I went to the grocery store, bought 3 bags of macaroons (chewy coconut cookies), and then dipped each cookie halfway into melted chocolate. Oh my gosh, I got three people asking me for the recipe! Huh? I was tempted to play it off like I was baking all afternoon, but I came clean.

They were super easy!

this recipe is always a crowd-pleaser and my friends and family always ask me to bring them!
Toffee Crunch Cookies
2 1.4 cups flour
1 teaspoon baking soda
1 1/2 teaspoon salt
1 cup melted butter (1 stick - I've also used "i can't believe it's not butter stick)
3/4 cup sugar
3/4 cup brown sugar (light or dark works)
1 teaspoon vanilla
2 eggs
1 package heath bar toffee pieces or bits-o-brickle

Preheat oven to 375. Mix flour, baking soda and salt in small bowl, put aside. Mix butter, sugars, vanilla and eggs in large bowl. Using a large spoon or potato masher, gradually add flour mixture. Stir in toffee chips. Bake for 10-12 minutes until fully cooked on a greased baking sheet. Enjoy!!

Rolo Cookies

2 1/4 cups flour
1 teaspoon baking soda
1 cup sugar
1 cup brown sugar
1 cup butter, softened
2 teaspoons vanilla
2 eggs
9 oz. package of Rolo candy

Preheat oven to 350F. Beat sugars and butter until light and fluffy. Add eggs and vanilla, beat well. Add flour and baking soda, blend well, chill dough in refrigerator for at least 3 hours. Roll 1 tablespoon of dough in palm of hand to form a ball. Press Rolo into ball, covering it completely. Flatten bottom of cookie into palm of hand. Press other side into mixture of 1 cup chopped nuts mixed with 1 tablespoon sugar. Place cookies, nut side up, on an ungreased cookie sheet. Bake for 9 minutes

Almond Sugar Cookies:

1 cup butter, (no substitutes), softened
3/4 cup sugar
1 teaspoon almond extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Additional sugar

GLAZE:
1 cup confectioners' sugar
1-1/2 teaspoons almond extract
2 to 3 teaspoons water
Green food coloring, optional
Sliced almonds, toasted

In a large mixing bowl, cream butter and sugar. Beat in almond extract. Combine the flour, baking powder and salt; gradually add to creamed mixture. Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Coat bottom of a glass with cooking spray; dip in sugar. Flatten cookies with prepared glass, dipping glass in sugar again as needed. Bake at 400° for 7-9 minutes or until edges are lightly browned. Cool for 1 minute before removing to wire racks.
In a small bowl, whisk together the confectioners' sugar, almond extract and enough water to achieve glaze consistency. Tint with food coloring if desired; drizzle over cookies. Sprinkle with almonds.
