they come out nice and soft, but after they cool they become like bricks. why does that happen and how can i keep them soft? i follow the directions on the package so i dont know what i'm doing wrong.

Could be that your oven temp is off. Remember too that cookies will continue to cook just a bit after you take them out of the oven.
Experiment, try baking only a couple of cookies each on 2 sheets.
So if your recipe says 10 to 12 mins. take a sheet out at 10 min. then leave one in til 12min. When cookies are cooled see which you prefer.

Besides the brown vs. white sugar changeout to keep the cookies soft and moist, your butter vs. margarine vs. oil vs. Crisco can also make a difference. Because they say Crisco is bad for us, I now only use half Crisco and then half butter for recipes that use to be all Crisco. (I just can't get rid of all my recipes that use Crisco!) You might try also baking them a little less - use the minimum amount shown on your recipe.

you can substitute some of the white sugar for Brown .
Brown sugar will make a baked product moister and chewier.
You'll need to experiment with your particular recipe, but I'd start with 1/2 white and 1/2 brown sugar.
