Over medium heat, cook the vegetables in oil until lightly browned. Add tomato sauce and stewed tomatoes and ro tel , and sausage, and cook down, until darkened, stirring often, scraping bottom of pot to avoid scorching. Will take about 20 min. to get to this point. once sauce is browned, add shrimp, garlic, tony's seasoning, salt and pepper. Cook for 10 minutes. Rinse 1 cup raw rice in warm water. Drain. Add rice and 2 cups water. Stir well. Bring to a boil. Lower heat and simmer till rice is cooked, 15 to 20 minutes.


that is the instructions in my recipe. I hate peeling shrimp so I was going to put chicken instead. Will the chicken get done in the same amount of time that the shrimp would, or will it take longer? should I put it in sooner? Also it will be cut up chicken into bite size pieces.

i don't like precooked chicken.
And also if the shrimp is peeled first I still have to butterfly it 'cuz I'm not leaving the 'poo' in there it's just gross. I'd rather have chicken in it.

That is way too long to cook the shrimp, anyway - usually it is added more towards the end, to prevent it from becoming tough and rubbery. (which it would, if you used shrimp and cooked it according to this recipe). If you add the chicken in the beginning, with the sausage, and cook the rest of the recipe as directed, your chicken will be fine! You are talking about bite-sized pieces, and by the end, including the browning stage, the chicken will have cooked 45 to 50 minutes - plenty of time!

Yes, substituting chicken for shrimp is quite common. Some
people have allergies and this is considered a safer version.
Cube the chicken and cook with the sausage. then just follow
your existing recipe. Manja!

Add the chicken earlier than you would the shrimp as it will take longer for the chicken to cook.

Jambalya is country cookin' from our forefathers. It was originally a sort of "cook what you got" stew. Use any meat you like- chicken, sausage, fish, etc. My receipe has 24 ingredients and basically says, seafood, pork, chicken and sausage. Beef is not used as it was not normally available in the back country of LA.

i use chicken, you can also buy the shrimp in a can as you would tuna fish, you can also buy frozen shrimp ands run it under cold water to defrost and dice that up... chicken cooks very fast.... same amount of time to cook.... also you can add keilbasa diced up too!!! I make jambalaya all the time!!!

Use precooked chicken so it will get done the same time as the shrimp would have.

You could also buy already peeled shrimp??? I do.
