Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots. Meatballs are good, as is chili or spaghetti.
Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand
Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

Swedish Meatballs Start to Finish: 50 minutes
Ingredients
1 egg, beaten
1/4 cup milk
3/4 cup soft bread crumbs (1 slice)
1/2 cup finely chopped onion (1 medium)
1/4 cup snipped fresh parsley
1/4 teaspoon black pepper
1/8 teaspoon ground allspice or nutmeg
1 pound ground beef
1 tablespoon butter or margarine
2 tablespoons all-purpose flour
2 teaspoons instant beef bouillon granules
1/8 teaspoon black pepper
2 cups milk
3 cups hot cooked noodles
Snipped fresh parsley (optional)
Directions
1. In a large bowl combine egg and the 1/4 cup milk. Stir in bread crumbs, onion, the 1/4 cup parsley, the 1/4 teaspoon pepper, and allspice. Add beef. Mix well. Shape into 30 meatballs.
2. In a large skillet cook half the meatballs at a time in hot butter over medium heat about 10 minutes or until done (an instant-read thermometer inserted into meatballs should register 160 degrees F), turning to brown evenly. Remove meatballs from skillet, reserving drippings; drain meatballs on paper towels. Measure 2 tablespoons drippings; if necessary, add cooking oil to make the 2 tablespoons.
3. Stir flour, bouillon granules, and the 18 teaspoon pepper into drippings. Gradually stir in the 2 cups milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 1 minute more. Return meatballs to skillet. Heat through. Serve over noodles. If desired, sprinkle with additional snipped parsley.
4. Makes 5 or 6 servings

4 cloves garlic, minced
1 15-ounce can tomato sauce
1 15-ounce can red kidney beans, undrained
1 15-ounce can chili bean, undrained
1 14.5-ounce can diced tomatoes, undrained
2 to 3 teaspoons chili powder
1/2 teaspoon salt

Shredded cheddar cheese (optional)
Chopped onion (optional)
Dairy sour cream (optional)
Crushed red pepper (optional)
Directions
1. In a 3-quart saucepan cook and stir ground beef, sweet pepper, 1/2 cup chopped onion, and the garlic over medium heat until meat is brown and onion is tender. Drain off fat.
2. Stir in tomato sauce, undrained beans, undrained tomatoes, chili powder, salt, basil, and black pepper. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes. To serve, ladle chili into bowls. If desired, top each serving with cheese, chopped onion, and/or sour cream and pass crushed red pepper. Makes 4 main-dish servings.
3. Chili for Two: Prepare as above, except divide all ingredients in half.
4. Cincinnati-Style Chili: Prepare as above, except omit sweet pepper, basil, and optional garnishes. Add 1 to 2 tablespoons unsweetened cocoa powder, 1 tablespoon cider vinegar, 1 teaspoon Worcestershire sauce, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground allspice, 1/2 teaspoon ground cumin, and 1/4 teaspoon cayenne pepper with the tomato sauce. To serve, place 1/2 cup hot cooked spaghetti on each of 4 serving plates; make an indentation in center of each portion. Top each serving with some of the chili, 1 to 2 tablespoons shredded cheddar cheese, 1 to 2 tablespoons chopped onion, and/or 1/4 cup additional kidney beans.

Meatloaf is a good cool weather option- and makes great sandwiches from the leftovers... this one is SUPER easy as the stuffing mix already has all the flavor-
2 lbs hamburger meat
2 eggs
6 ounces Stove Top stuffing mix, any flavor
1 cup beef broth
1/4 teaspoon salt
3 slices bacon
1/4-1/2 cup ketchup
In a large mixing bowl put the hamburger meat, eggs, stuffing, broth and salt. Mix well.
Place the mixture in a bread loaf pan. Put the bacon across the top. Bake at 350 degreees for 60-70 minutes, or until done.
The last 15 minutes of cooking, spread the ketchup on top of the meatloaf.
If you don't want to use ketchup, put a can of condensed cream of mushroom soup on top of the meatloaf right before you put it in the oven.

Make hamburger gravy. Its good.Eat it with biscuits or bread. It's quick and easy too.
1 1/2 pound ground beef
1 package onion soup mix
1 cup water, more if desired
2 carrots, sliced
2 tablespoons flour
1/2 cup water
Brown ground beef and drain. Add onion soup mix and enough water to give it a "soupy" consistency. Add sliced carrots. Dissolve the flour in 1/2 cup water and mix with whisk (or until there are no lumps). Stir slowly into beef mixture. Stir thoroughly. Should have the consistency of gravy. Serve over potatoes, rice or noodles

I make this every couple weeks and it's really good stuffed in tortillas with some cheese. Dirty Rice Recipe 2 Tbs (30 ml) vegetable oil 1/4 lb (125 G) ground pork or beef 1 tsp (5 ml) cayenne pepper, or to taste Salt and freshly ground black pepper to taste 1 tsp (5 ml) paprika 1 tsp (5 ml) dry mustard 1/2 tsp (2 ml) ground cumin 1/2 tsp (2 ml) dried thyme 1/2 tsp (2 ml) dried marjoram 1 Tbs (15 ml) finely chopped garlic 1/2 cup (250 ml) EACH, finely chopped onions, green and/or red bell pepper, and celery 3 cups canned or fresh beef or chicken stock 1 1/2 cup (375 ml) uncooked white rice Cook the meat in the vegetable oil in a large skillet over high heat for about 5 minutes, until thoroughly browned. Stir in the seasonings and the onion, peppers, and celery. Reduce the heat to a moderate flame and cook, stirring frequently, for about 10 minutes. Add the stock and stir, being careful to scrape all the brown bits off the bottom of the skillet. Add the rice and stir thoroughly. Cover and reduce the heat to very low. Cook for 15 minutes without lifting the lid. Remove from the heat and fluff the rice with a fork. Keep tightly covered if not served immediately. Serves 4 to 6.

I recommend going to to http://www.about.com.
Click on food and drink, type in ground beef in the little search window and then check out all the wonderful things they have listed there to do with ground beef.
We're a big stroganoff, meatloaf, spaghetti and hamburger soup family....they are all wonderful and work great for us.
Good luck and I hope you find a great meal!
