fresh baked bread or something sweet to counterbalance the spicey. Like baked apples or apple brown bettie. Corn is nice to put on the side or add to the chili. You could have a whole little area of add ins. LIke Sour Cream, Shredded Cheese, Scallions, Corn, Corn bread. Things like that. Other good sides are like Corn Chips to either dip in or eat the chili with.

I know you asked what sides, but here is a recipe that you can make with chili...
Pour 1.5 to 2 cups of Frito Lay Corn Chips in a bowl
Cover the corn chips with chili.
Voila. You have just made a Frito Pie :) I grew up in Texas and as a kid, I used to love these :)

I like to put either rice or cornbread in the bowl and cover it with the chili. As for veggies, sauteed red and green peppers or corn is always good.

My family likes baquette toasties:
1 baquette loaf
Cheese,Onion, Black Olives, Avacado, cream cheese, salsa and any other thing you think would be good...or your family enjoys.
Cut the baquette into slices at an angle. Place them out and add:
Cheese, onion and black olives mixed together OR
Cream cheese a little sugar to sweeten the cream cheese, salsa and black olive.
Cheese alone
Cheese and onion
Or any other thing you can think of to mix with cheese to make a nice little melted "scoop" to eat with the chili.
You can also, toast the slices of baquette by themselves and then add:
Cream cheese and salsa together
Avacado
Or any other cold dip that your family enjoys to go along with the heat of the chili.
They also enjoy scrambled egg sandwiches. We make the scrambled eggs and then lay cheese over the eggs..melting it to "hold" the eggs together better. Add to bread, plain or toasted, and we add tomatoe slices. (The cold tomatoe sets off the heat of the chili also)
We tend to steer away from the traditional corn bread or rice, although at times, we do go back to it. (LOL we're a strange family)

Rice is traditional for some people. Cornbread can be really good, especially if you add blended chipotle peppers to the batter. Fried okra would be good if you are looking for something green and slightly more healthy.

Rice is a simple side dish that effectively sets off the flavour, texture and colour of chilli.
