Hmm. There's one who is not canonized yet (although he has been beatified) who might really interest you. His name is Blessed Miguel Pro. He was a Jesuit priest in Mexico at the time the Church was being persecuted there in the 1920s, and all non-Mexican priests and religious had been expelled from the country and the churches closed by the government. He went "underground" (because to be caught celebrating Mass or administering any of the sacraments was punishable by death). He had a great sense of humor and affected many disguises in order to move about -- some of which were hilarious. He enjoyed a good joke and used humor, including funny drawings, to lighten tense situations. Unfortunately, he was found by authorities and arrested on trumped-up charges, and died a martyr. His full name was Miguel Augustin Pro.
If you must have a canonized saint, St. Philip Neri was known for his sense of humor as well.

The patron saint of comedy is St. Genesius of Rome. He made his carrier making fun of Christian Baptisms. During one performance for Emperor Diocletian, he was converted right on stage because of a vision form God. Some time afterward he was tortured and killed by the Emperor when Genesius refused to renounce his faith.

St. Lawrence (also spelled Laurence) was a deacon martyr who is famous for his joking with his tormentors as he was being grilled alive.

For your information anyone who accepts salvation through Christ and makes Him Lord of their lives is a saint. These are not my words but are God's words(bible). Only the catholic church has put this label on specific people and that is not what makes a saint. If you are catholic take time to read the scriptures and make your own choices from your own understanding. Don't take any body's word for these matters check them out in the word of God.
