Some good, yet inexpensive things to make are:
Chili, Stews, Bean or pea soup with cornbread, spaghetti, baked macaroni and cheese, on Sunday make a roast and use the leftovers to make BBQ or meat and gravy over potatoes or rice, meatloaf, meatball stroganoff, lasagna...Always make sure that you make enough for leftovers so that you can get at least two, and possibly three, meals out of each initial meal.

I also fight this each week. Not so much for the cheap abilities but moreso, what my family will eat. (I live with two very very picky eaters...makes it tough to make meals).

You don't say what your budget is, or what you consider cheap.... but here is something I like to make and its easy....cheap...and everyone seems to love it. *( I make a lot of it, freeze the extra in a few containers so I have an easy meal to thaw out, heat up and serve without a lot of work)*

Stroganoff, the "cheap" way. -
I use venison in mine, but you can use meatballs, hamburger or any other meat you have available..including chicken. (its not as difficult as so many people believe either, I make mine in the crock pot)

INGREDIENTS:
2 teaspoons olive oil (I use basic oil)
2 teaspoons butter
1 large onion, chopped
8 ounces sliced mushrooms ( I use canned if I use them, my boyfriend doesn't like them)
1 pound lean ground beef (or any other meat you have available works too)
1 tablespoon all-purpose flour
1/3 cup liquid (beef broth, water, etc.)
1/2 teaspoon salt
2 tablespoons ketchup
1 cup (8 ounces) sour cream

PREPARATION:
Saute onion and mushrooms in oil and butter until onions are until tender. Remove and set aside. Brown ground beef in the same pan; drain off excess fat. Sprinkle flour over ground beef; stir to blend.

Add liquid, onion, mushrooms, salt, and ketchup. Cook and stir until mixture is thickened; stir in sour cream and heat through. Serve over hot buttered noodles (any noodles work).
Serves 4.

Spaghetti, meatloaf, chicken and dumplings, chili, stew, bean soup and potato soup are a few others I can think of.
