applesauce

Ingredients:
4 large apples, peeled, cored, and cut into pieces
1 cup water
1 tablespoon sugar or sugar substitute, or to taste
2 tablespoons lemon juice, or to taste
1 teaspoon ground cinnamon
Ginger, if desired, to taste (opt)
Preparation:
1. Place apples and water in saucepan. Bring to boil and cook for about 10 minutes.

2. Blend remaining ingredients with cooked apples and water in blender or food processor; process until well mixed.

3. Taste, and adjust sugar and seasonings as needed.

NOTE: If you like chunky applesauce, you can just remove saucepan from stove after cooking apples, add remaining ingredients, and stir. If lumps are too big or too numerous, mash some of them out.

Peel, core, and cut the apples. Small chunks is good. Put in a sauce pan with a pinch of salt, a little cinnamon (if you like), sugar to taste and the juice of one lemon and a few tablespoons of water. Cover tightly and turn on low for about 20 minutes.

Check the apples to see if they are soft. In not, cook longer. If soft you can either eat it as is or mash them up a bit more.

A microwave oven makes sensational applesauce. Just peel, core and slice 6-8 apples. Put them in a micowavable bowl with no water or sugar and loosely cover the bowl with plastic wrap or waxed paper. Cook the apples slices for 7 to 8 minutes, or until soft enough to mash with a potato masher. (If the sauce does not mash easily, return it to the microwave and "nuke" it for another minute or two.) Add sugar, spice, raisins, and nuts if you want. You can increase the quantity - just nuke for a longer period. A real plus to making applesauce this way ... if the phone rings, the sauce won't burn!

Simplest is to take however many Brambly (cooking apples) - two or three is usually enough to make the same amount as in the jars in the shops. Add about 1 oz (tablespoon) of sugar (granulated is fine). Put on a low heat and stir every minute or so. Depends on how 'mushy' you like it but usually ready in about 10 mins - raising the heat will just make the apples burn. You can sweeten further if you like, but I always like to add a good splash of Calvados (brandy) for Christmas!

Get some eating apples as they are sweeter, remove the skin and chop into small chunks. Put into a pan of boiling water(about 6oz) , it will only take a few mins, take pan off heat and drain the water off in a colander. Then just use a fork to mash the apple and add sugar to taste.

Peel and thinly slice couple of apples - pop into a saucepan with a little water. Cook until soft - don't walk away from them cos they burn easily. Just beat them up with a fork as they cook until they are nice and soft.
