So I just figured out that the red things in the middle of olives are not there naturally. What are they exactly?

Pimentos, or fake pimento nowdays. They are a type of preserved sweet red pepper.

They are Pimento's, put there because they are pretty, also to fill the hole where the olive seed came out of.
