Up-On-The-Rooftop Pizzas
32 slices pepperoni (about 2 oz.)
1 (16.3-oz.) can Pillsbury® Grands!® Refrigerated Buttermilk Biscuits
1 (15-oz.) can chunky Italian tomato sauce
4 oz. (1 cup) shredded Cheddar cheese
4 oz. (1 cup) shredded mozzarella cheese
DIRECTIONS
1. Heat oven to 375°F. Lightly grease 2 large cookie sheets. Stack pepperoni slices; cut out small wedge from stack so each slice resembles reindeer hoof print. Set large pieces aside; reserve small cut-out pieces.
2. Separate dough into 8 biscuits; place 4 inches apart on greased cookie sheets. Press out each to form 6-inch round. Spread 2 to 3 tablespoons sauce on each round. Sprinkle small cut-out pepperoni pieces over sauce. Sprinkle each round with Cheddar cheese; sprinkle each with mozzarella cheese. Top each with 4 pepperoni "hoof prints."
3. Bake at 375°F. for 10 to 12 minutes or until edges are golden brown and cheese is melted.
Gingerbread Stars
INGREDIENTS
1 roll (18 oz) Pillsbury® refrigerated gingerbread cookies
1/2 to 3/4 cup all-purpose flour
1 cup white vanilla baking chips
2 tablespoons shortening
DIRECTIONS
1. Heat oven to 350°F. Remove half of cookie dough from wrapper; refrigerate remaining dough until needed.
2. Sprinkle about 1/4 cup of the flour onto work surface; coat sides of half of dough with flour. With rolling pin, roll out dough to 1/4-inch thickness, adding additional flour as needed to prevent sticking.
3. With floured 3-inch star-shaped cookie cutter, cut out dough stars. Gently brush excess flour from stars; place 2 inches apart on ungreased cookie sheet. Repeat with remaining half of dough.
4. Bake 7 to 9 minutes or until light golden brown. Cool 1 minute; remove from cookie sheet to wire racks. Cool completely, about 15 minutes.
5. In 1-quart saucepan, heat baking chips and shortening over low heat about 4 minutes, stirring occasionally, until chips are melted and smooth. Remove from heat. Dip half of each cookie into vanilla coating, allowing excess to drip off. Place cookies on waxed paper-lined cookie sheet; refrigerate until vanilla coating is set, about 30 minutes.

Pumpkin Pie
For the crust
gingersnap cookies
1 1/2 sticks of butter, cut into tablespoons
Put gingersnap cookies in a food processor until evenly crumbled, then add chunks of butter. Mix until evenly processed.
Put cookie crust evenly into pie pan using you hands, then bake for about 8 minutes at 375 or until hardened slightly. Let cool.
for the Filling
1 can of plain organic pumpkin puree
1/3 cup of brown sugar
1/3 cup of granulated sugar
3 large eggs
1/2 stick of butter melted
1 teaspoon of vanilla extract
cinnamon and nutmeg to taste
Combine both sugars with pumpkin puree, then add eggs one at a time. Then stir in melted butter, and then vanilla extract. Add in desired amount of spices, I add in about tablespoon of each because I like the spices to really balance the sweetness in the filling
Then bake a 375 for 25 minutes. One sure way of telling when your pumpkin pie is done, is to shake it slightly, if you see the filling is still moving in the middle add a few more minutes, keep doing this until it does not move when you shake it, let it cool completely then either serve or refrigerator.

My personal fave is individual cheese cakes. Make with regular cheese cake receipie but insted of pouring it into graham cracker pie crust use muffin tins. Insert paper baking cups into tins as you would to make muffins place 'Nilla wafers (one in each baking cup) pour enough mix to 2/3 rds full bake as usualYou can add whatever topping you choose or have several out and allow guests to add their own . P.S. 'Nilla Wafers ' are made by Christie cookies can be found in baking isle of grocery store and the are hard plain -tasting vanilla cookies good luck
