Cook them in the griddle or skillet, you could use your favorite recipe.!
Gold Rush Griddle Cookies
3-1/2 cups sifted all-purpose flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup shortening or butter
1 beaten egg
3/4 cup milk
1-1/4 cups Sun-Maid Natural Raisins
MIX dry ingredients together in large bowl.
CUT in shortening or butter until mixture is "mealy".
ADD egg, milk, and raisins and mix until all ingredients are moistened and dough holds together (dough will be very stiff).
ROLL out onto floured board to 1/4-inch thickness.
CUT dough using a 2-inch cookie cutter.
HEAT griddle until a few drops of water "dance" when water droplets are sprinkled over the hot griddle (be careful not to overheat).
OIL griddle lightly with shortening (do not burn shortening).
PLACE cookie shapes onto the hot griddle.
COOK one side until the bottom of the cookie turns golden brown (the top will become puffy).
FLIP with spatula and brown on other side. Makes approximately 4 dozen.
