Use the CRUSHED TOMATOES they are practically mush! If all you have is chunks the put them in the food processor or blender. Or just the tomato sauce. You need some type of tomato in it thats the base of the chili. You should try the white bean and chicken chili. She may like that better...
White Bean Chicken Chili
2 tablespoons vegetable oil
1 large yellow onion, chopped
1 stalk celery, chopped
1 1/2 lbs boneless skinless chicken breasts, cubed
2 cloves garlic, minced
2-3 jalapeños, minced
1 tablespoon chili powder
1 teaspoon dried oregano
2 teaspoons ground cumin
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (or more)
2 cups chicken stock
1 (19 ounce) can white kidney beans, drained and rinsed
1/4 cup cilantro
1 cup shredded jalapeño jack cheese
In a large saucepan over medium heat combine the oil, onions and celery.Cook, stirring for 5 minutes.
Push onions and celery to the sides, turn the heat up to medium high and add the chicken. Cook, stirring constantly for 5 minutes. Add the garlic, jalapeños, chili powder, cumin, oregano, salt and cayenne. Cook, stirring for 2 minutes.
Stir in stock and bring to a boil. Reduce heat to medium low and simmer for 15 minutes. Stir in beans and cook for 5 minutes, stirring gently. Remove from heat and stir in cilantro.

Using my Crock Pot is the only way I make chili. STEAK CHILI 1 to 2 pounds of a thin cut Round Steak cut into 1/2 inch size cubes 2 cans Kidney Beans (Dark or Light) 2 cans Diced Tomato's with Chili Seasoning 1 Medium Diced Onion Chili powder \ Salt & Pepper/ To taste Cook on low for 8 to 10 hours. Jazz it up and sprinkle cheese over top. Enjoy

You can eliminate the tomatoes but you will need at least some tomato sauce or paste.
Hopefully, she just does not like the feel of the tomatoes. Can't have chili without the tomato taste.
Try adding a half can of beer. Seriously!

I think tomatoes are an integral part to any chili recipe.
Why doesn't she like the tomatoes? Does she not like them at all?
Maybe you can reduce the amount of tomatoes and fill the chili with lots of beans instead.
I googled "no tomato chili" and came up with several recipes.

I don't think I would like it as well, but I'm not eating any of it - so, who cares? Try it without the tomatoes. That is the only way to find out if it will taste ok. Another option would be to make two different batches; one with tomatoes and one without.

My hubby and I don't like tomatoes in chili either, but in some recipes, I add them anyway. We just pick them out. I don't see that it would detract from the chili, but if you want to add them, try seeding and quartering a large, fresh tomato. Then you can pick around it for your wife.

I compromise because I don't care for tomato chunks either. I use tomato puree instead or throw the tomatoes in the food processor for a spin. It tastes the same but I don't have to deal with the chunks.

yes you can make chili with out the tomatoes just use the meat, water , spices .I like to use dried red chili pepper and fresh jalepeno peppers,fresh onion season to taste and slow cook it all day in your crock pot

Brown 3 pounds ground beef; drain. Add meat; cook overnight on low. Makes about 3 quarts and freezes well. Serve with cornbread or crackers.
