My advice would be to go for things you really like - especially if the weather's rubbish like it is here today!

Look for things that are in season locally and go for a range of colours - then you are getting lots of yummy flavours AND a range of nutrients at the same time. So you could go for some nice cabbage, carrots and some peas along with the roast potatoes (which go without saying). I also like the sound of the honey roasted parsnips but they burn real easy (it's the honey y'know). If you are watching the carbs, then swap the peas for some runner beans or broccoli.

Don't forget to have lashing of gravy and some sage and onion stuffing too, no roast chicken meal is comnplete without those.

These are a huge hit at our cookouts that I do when we have chicken...

HERB-ROASTED NEW POTATOES

1 lb 14 oz small red potatoes, unpeeled (or russets)
1/4 c Chopped fresh basil or 1 tsp dried basil
1 tb Chopped fresh oregano or 1 tsp dried
1 tb Olive oil
1/2 ts Salt
1/4 ts Black pepper
2 1/4 oz Grated parmesan cheese

1. Preheat oven to 425F. Cut the potatoes into 6-8
wedges each.

2. In a large bowl, combine the basil,
oregano,oil,salt and pepper. Add the potatoes and toss
to combine.

3. Place the potatoes on a nonstick baking sheet and
sprinkle with parmesan cheese.

4. Bake for 20-25 minutes of until tender and golden
brown.

At least 1 green and 1 red/orange, but the more different ones the better.

My favourite combination is peas and carrots.

A piece of trivia: potatoes do not count as vegetables for the 5 a day.

it's always nice to roast vegetables with the chicken - potatoes, onions and carrots. For something different add some quartered fennel bulbs or parsnips.

How about roast potatoes and roast mediterranean veg-----onion segments courgette slices butternut squash pieces etc
drizzled with olive oil and roasted on a tray

Serve it with roasted red potatoes and parsley, or wild rice (my personal favorite!), plus a steamed or roasted veggie, like broccoli or asparagus. Oh - and a nice crisp salad to start the whole meal off....yum!

How about steamed Brussel sprouts with cheese sauce & candied carrots ?? That's different for a change... Or baked whole sweet potatoes and baby Lima beans. Or Corn on the cob & boiled whole potatoes(leave in the broth)! Or fried or boiled cabbage & garlic mashed potatoes.
