I love sweet potato pie. Here's a simple recipe from Eagle Brand. Experiment by adjusting the spices and sweetness to your taste. I agree with the footnote to use fresh sweet potatoes instead of canned. Your pie will be SO much better.

Ingredients
1 pound sweet potatoes, cooked and peeled
1/4 cup butter or margarine
1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 teaspoon grated orange rind
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon salt
2 eggs
1 (9-inch) unbaked pie crust

Instructions
Preheat oven to 350°F. In large bowl, beat sweet potatoes and butter until smooth. Add EAGLE BRAND®, orange rind, vanilla, cinnamon, nutmeg, salt and eggs; mix well.
Pour into crust. Bake 40 minutes or until golden brown. Cool. Garnish as desired. Store leftovers covered in refrigerator.

Notes: For best results, use fresh sweet potatoes.

Just like pumpkin pie recipe on the back of Libby's pumpkin, only substitute the pumpkin with Sweet potatoes.
Or
SWEET POTATO PIE
1 partially baked 10 inch pie shell
3 eggs
2 c. mashed sweet potatoes
1/2 stick butter
1/2 c. sugar
1/2 c. light brown sugar
1/2 c. dark Karo syrup
1 1/4 c. evaporated milk
1 tsp. vanilla flavoring
1/2 tsp. lemon flavoring
3/4 tsp. salt
**Use the pumpkin pie spice mix instead of the ginger, cloves & nutmeg. or use individual spices your choice.
3/4 tsp. ginger
3/4 tsp. nutmeg
1/8 tsp. ground cloves

Heat oven to 350 degrees. Separate egg whites. Beat 1 egg white with 1 tablespoon water and brush over pie shell. Bake pie shell for 10 minutes in oven, remove. Beat egg yolks and add sweet potatoes, melted butter, sugars, syrup, cream, salt, flavorings and all spices. Beat egg whites until stiff and fold into sweet potato mixture. Pour into pie shell and bake until knife inserted in filling comes out clean, about 40-50 minutes.

Things like sweet potato pie are all based on opinions. You can go t any recipe site and find a basic recipe, but then its up to you to add what you want based on your tastes. Personally i like to add lots of brown sugar, or even a layer of it, to the pie to give it more sweetness. I also like to put some marshmallows on the top of mine.

You can also add cinnamon to taste.

Oh, and if you're mashing the potatoes for the pie, then remember to add WARM milk while mashing. Warm milk will make them creamier and have a better texture and taste.
