Do I have to drain the cans of kraut before I add them? I can't remember, it's been a while since I made it.

Well drain the sauerkraut if you want a lighter taste or rinse for even a lighter taste. Too much salt to use the brine.

If you want really good sauerkraut, then yes you absolutely must drain the cans. Better yet, dump the kraut into a colander and rinse it well with water to get rid of that "canned" taste. Then squeeze it to get rid of the extra water.

Put a couple of tablespoons of bacon fat (or cooking oil) in the bottom of a heavy pan and cook a finely chopped small onion in it until the pieces begin to turn brown around the edges. Add the kraut, saute a minute or two, then add 1/2 cup water. Also add a couple of teaspoons of caraway seed if you have some handy. Simmer, covered, stirring now and then. After a half hour or so push the pieces of kielbasa down into the kraut (you may want to add more water) and cook another half hour. Yumm!

PS - in Germany they often use leftover champagne or a dry white wine instead of water for cooking sauerkraut.

Now you've made me hungry, so I guess I have to go down to the store before the storm hits and drag home some sauerkraut. The next time you buy some, remember that the stuff you find in the plastic bags is fresher than the canned and has a much nicer flavor.

Yes, you should drain and rinse it before you use it unless you like it really sour.

Hint: Substitute beer for any liquid you need to add. This gives an excellent flavor to your kielbasa and kraut.

I do. Then I fry the sauerkraut gently for awhile, so it becomes a golden brown color. Be careful not to cook too high/fast or it will be dry and burnt. Then I add the (previously cooked up) sausages and let it cook together awhile longer. I like it with potatoes, too- any kind will do.

no dont drain the juice!!! pour the whole thing in and also, i make a bunch of mashed potatoes and put the souerkraut and juice right on top of the potatoes... mmm mmm mmm... now I want sauerkraut!!!

Yes! Sorta brown or heat your kielbasa & some onion in a skillet, pour in "WELL DRAINED!!!" Kraut. Then fry in butter. Add a spoon of sugar. You can use the juice if you want the wet juicy "SOUR" kraut, your choice.
