Scrambled eggs are one of the quickest and most convenient ways of cooking eggs.
174 calories per portion
14.3g fat per serving

Preparation Time:
Serves: 1

Ingredients
2 Large Lion Quality eggs
Pinch of salt and pepper
2 tbsp milk (optional)
Low Calorie Cooking Spray

Method

1. Gently beat the eggs together with salt and pepper. Add 2 tbsps of milk to the eggs for a softer result.

2. Spray some cooking spray in a non-stick pan over a medium heat. When sizzling, add the egg mixture and stir with a wooden spoon.

3. Continue to stir the eggs for 1-2 minutes, scraping the egg off the base of the pan as it sets.

4. When most of the egg has set, remove the pan from the heat and continue to stir for 30 seconds until fully scrambled.

Micro Tip

For extra speed scramble the eggs in the microwave.

1. Beat together the eggs, milk, salt and pepper in a microwave safe jug or bowl. Cover with plastic food wrap and microwave on HIGH for 2 minutes (650 watt oven)/1 minute 30 seconds (750 watt oven).

2. Stir mixture and microwave for a further 30 seconds (for both 650 and 750 watt ovens). Stand for 30 seconds before serving.

Break 2 whole eggs per person, add 4 tablespoons milk (2 per egg, general rule), salt and pepper and whisk together. Heat a small knob of butter and a little oil (to stop the butter burning) in a small saucepan, pour in the egg/milk mixture and leave for about 30 secs - just to start the base setting. Then move the egg mixture around all the time until it becomes thicker and scrambled to your liking. Some like them more runny than others.

Remove from heat and place on buttered toast and eat while hot.

Bread is around 70 calories a slice, eggs are around 90 calories each. It would take 3-4 eggs to cover 2 slices of bread. So with nothing else added thats 500 calories. If you add 1/2 oz of butter that's another 105 calories.

For one :

Break two eggs into a jug, add a splash of milk and beat with a fork, heat a knob of butter in a pan until melted, add beaten eggs and keep them moving around the pan on a pretty low heat until they are ALMOST set - take off the heat as they continue to cook. Add another bit of butter if you like it! Turn out onto toast. Yumm enjoy.

Add a lil splash of milk.
With a fork whisk it together so its creamy.
Place in microwave for 3 mins.
Be carefull it don't rise and explode. Good idea to stir or just turn it over within one and half minute.
Enjoy!
