A vegetable dish of some kind.
6 carrots and one parsnip, peeled and chopped and put in a pot to steam. Add a little fresh ginger root. Steam altogether for about 15 minutes until veg is soft. Mash with butter (optional) or a little milk and add salt and pepper to taste. Serve warm. A spoonful for everyone, and leftover makes great soup. If you like, you could include half a celeriac as well, it has a nice flavour.
Another dish I found on the Internet: 1 roasted butternut squash, remove seeds and outside, mash with lots of paprika powder, add pepper and mix a little feta cheese through it, and put a layer of feta cheese over the top and return to the over for 15 minutes to melt the cheese a little. Delish.
Roast winter vegetables: Whatever root vegetables you fancy: a couple of sweet potatoes, carrots, onion, turnip, squash, parsnip, etc, in a large roasting dish with lid, sprinkle some olive oil over it, and some paprika powder and some rosemary, fresh is better but dried is good too. Roast for about an hour, stir them once to redistribute the oil, and take off the lid for the last ten minutes to crisp the top ones. Absolutely divine, they all go sweet.
Leftovers? Get a big pot and some stock, put the leftover veggies in there and heat, blend the whole lot together and you have the most amazing winter soup ....

Here's a quick, popular, no hassle slow-cooker (Crockpot) idea. Purchase a couple packages of Little Smokies (about 2 #). Rinse and drain them. Put 1 cup yellow mustard and 1 cup brown sugar in the slow-cooker, add a dash or 2 of hot sauce if you wish, then stir in the Little Smokies. Heat and serve. If you wish to get fancy, skewer each Little Smokie with a colored toothpick before adding them to the slow-cooker. If there will be an extended lunch break, I'd double the recipe.

lasagna is fine, or bring cookies and ice cream for dessert. You can pick those up at a supermarket the day before and just bring them in to work with you.
