the term chop applies to pieces between 1/4 inch to 1/2 inch square. mince applies to pieces between 1/8 in to 1/4in. rough chop means about 1 inch pieces.
A good quality knife is key to a mince. a dull knife will just crush the food rather than cut it.

mincing is chopping something very finely.. when you chop, you reducing it in size, but it's usually not fine
