Personally I think that the idea of eating with your eyes is very much over rated .I actually eat more with my nose more than with my eyes If your food isn't properly cooked ,properly seasoned ,at the right temp and doesn't taste great then it doesn't matter what it looks like
For me the most important thing about a food presentation is the amount of food on the plate .
Just because you made x amount of product does not mean that you have to put it all on the plate. Learn to leave what's called neutral space on your plate
The next thing that I would want to see is the practical aspect ;That the guys working the line could plate it fast and that a waiter could serve it to the guest looking as good as it did when it left the kitchen

If it is a buffet style presentation, your layout is very important. Place items in the order your guests would select to put them on their plates. 1st item - the plate. At that point (if not before) take their drink order. Breads and meats, then sides as they move around the selections. Sauces, relishes, and finally napkins & utensils (why does everyone put utensils 1st - guests then have to carry them thru the entire buffet selection). Hand them their drink & everything is organized.

the presentation , you want the colors of the foods to compliment each other, make the food appealing to the palate, and most importantly do not put to much on the plate.

the new look for fancy chefs to plate their food now is stacked and in the middle of the plate... if your doing a big thing make it look nice by placing lets say a cracker then a piece of cheese and go into a pattern.

Plating...nothing can make a dish less appetizing than poor plating.
A nice presentation can make even a mediocre dish tast delicious.
