any thing else is fine but no meat! if i can use beans as a substitute thats fine!

Just make sure there's no lard in the beans!

Chili con Queso is great in any form. You can have it as a dip with chips or you can put it in tortillas, or you can even make enchiladas with them. Here is the general ingredients list:

1 onion, chopped
1 tomato, chopped
1 bell pepper, chopped
4 tbsp. oil
2 tbsp. flour
1 c. water
1 sm. box Velveeta cheese (Mexican style, optional)

You can make Potato Enchiladas, Omelettes, Tamales with veggies and even cheese , Quesadillas, veggie burrito, enfrijoladas (bean sauce over folded tortillas, with cheese), entomatadas (same as previous but with tomato sauce, cheese), guacamole with chips ...I can go on and on.

well there is so many dishes you can try. such as sopes that are is made from a thickish, small circle of fried masa of ground maize, with pinched sides. then topped with refried beans and topped with crumbled cheese, onions, red or green sauce. believe me they are delicious
