The local job ads are always looking for "cheesemongers". You have to really know your cheeses from all over the world, be friendly, recommend wine pairings, and offer people little bites. Dean & Deluca is always looking for a new cheesemonger.

it depends on your skill. if you're a connoisseur, but don't make it, you can get a job in a specialty foods shop in their cheese section, or a gourmet cheese shop. if you're interested in making cheese, look into dairies.
