No, but I'm sure people would if there were numerous major holidays in a one month or so period.
Thanksgiving, Christmas, Hannukah, New Years, and so on and so on... Happy holidays means happy holidays. Those are a lot of holidays.
Edit: Yeah, there is more than one holiday in February but nothing that anyone gives a flip about. Stop looking for anit-christian conspiracies where there aren't any.

There are a lot of holidays in every month, but not LARGELY known and practiced holidays such as Christmas, Hanuka, Yule and Kwanzaa

No, I don't. But when I am referring to more than one Holiday at the same time, then it is appropriate to say 'Happy Holidays". It's either that, or I wish everyone happy "Ramahanakwanzmassanalia"... you pick!

i say happy holidays on every holiday.
most of the holidays the mainstream celebrates are meaningless to me, so i wish them happy holiday and leave it at that.
