While making the vowel in the word "cheese" a person will often spread his/her lips, giving the impression of a smile. So it's a way to approximate a smile for the picture.

Because the "ee" sounds makes your mouth form a smile.
Since people expect the photographer to say "cheese" often the photographer - if they can be original at all - will come up with a random word that you don't expect, producing a REAL smile. Not a cheesy one. (Pun intended, actually. I know, I'm groaning too.)

Originally it was a reference to 'cut the cheese'. No one can resist a smile at that sort of thing, especially in a semi-formal setting as a portrait picture. Soon, it was just 'cheese', and inevitably its original meaning became lost in the mist. Well, not the mist, okay, because that seems to graphic. Lost in time.There. Better.

People say 'cheese' because when you pronounce the 'ee' part in 'cheese', your mouth ends lift up, therefor making you smile. But you COULD say it with your teeth gritted. Whoever thought of that must have been hungry...=D

Stand in front of a mirror and slowly say "cheese". You almost have to smile to say the word. That is the object: to get people to smile, not frown.

I think it is from the olden days, they used to say cheese and then the kids thought that was funny so they laughed, and they got their pictures taken laughing with big nice smiles on their faces.

They say "Cheese" because when you say it your mouth makes a smile. So instead of waiting for the camera, you can wait while saying CHEESE! =]
