when they fly away and must stay in hotels, are the hotel costs paid for by the airline, or must the money come out of the flight attendants pocket?

It's paid for by the airline. It's part of their flight schedule and job.

For every flight destination, the airline has prearranged housing for flight crews. These places are paid for by the airline.

It's a business expense. Most airlines do one of two things. Have rooms pre booked for their attendants or have their attendants file expense reports for their trips . In other words they pay for it but get the money reiumbursed to them.
