From the information that I have been able to obtain, it appears that they are easy to digest and have a lot of nutritional value. However, you would want to make sure that they were fresh, organic, free-range and preferably from a local source.

I wouldn't suggest eating raw egg because of food borne illnesses that can exist and make you very sick. Egg protein is the highest quality protein that is available to us. Meaning that it is the most absorbable and useable to our body. Eggs also have Fat soluble vitamins A,D,E,K, B vitamins, iron, choline, cholesterol, and fat. I don't know why people eat it raw, they may think that the vitamins in the egg will cook out from heat. This isn't true since most of the vitamins are fat soluble and heat stable. Usually some nutrients in food but not all are cooked out by any heating method.

only those uneducated in nutrition would consume raw eggs today as there is no benefit consuming them raw vs cooked. consuming too many raw eggs can cause a biotin deficiency which over time can have a negative effect on the metabolism and general health.

apparently far too many have been watching Rocky movies. real athletes in 2007 don't consume raw eggs.

They can give you Salmonella. If you cook them, they actually produce biotin which I would guess is a better choice.
