Optical engineering. A smoke machine and a laser would be a good start... yes i know officially they are crystals or something in the movie but we all know they are lasers!! the sabres make laser noises.

I'd say Temporal engineering, and/or Warp Drive engineering since you if you want a "real" light saber (that will, for example, cut your sons hand off) you are probably going to have to go to a galaxy far far away.

You would need a Masters degree in Fictional Engineering (MSFE). They are the ones who design perpetual motion machines used by Area 51. They are also involved in the design of flying saucers, tele-transporters, and antimatter engines.
