I like freshly made warm potato salad so can I reheat leftover potato salad without getting sick? What about other things made with mayonaise or sour cream like hot artichoke/spinach dip etc.? Why wouldn't it spoil under heat?

If it was served warm or hot previously, it should reheat just fine. People freak out about mayonnaise, but, it is not really the problem--it is acidic and, therefore, actually retards spoilage. The problem is with foods that have been held too long in the "danger zone" between 40 (approximate refrigerator temperature) and 140 (temperature high enough to keep the bad bugs away). So, if you enjoy your potato salad, store the leftovers quickly and appropriately in the refrigerator, and reheat the potato salad to enjoy it again, you should be just fine. You may want to reheat gently to avoid the oil separating from the mayo (use a defrost or reheat setting instead of a cook setting on your microwave).

Reheating things with a dairy based sauce or binder is a tricky thing to do at times.......and I think you're confusing reheating refrigerated food with a mayonnaise based food that is going to be sitting out at room temperature for more than 2 hours (which is the USDA cutoff for foods left out PERIOD without refrigeration) Sometimes reheating things with a mayonnaise base (or a sour cream base) things can separate during the reheating process.......this is when the microwave oven serves a very good purpose......Enjoy!!!

When dealing with foods that have mayonnaise in them, the first question you need to answer is " does the mayo have egg in the ingr. list. Most light mayo does not have whole egg, and does not break down as easy. The bacterial growth accures in the "danger Zone" 40-140 % Farenh. Cool and heat items quickly, in a shallow pan, under refrigeration, and reheat rapidly, IE. microwave, or skillet.

Chicken biryani... had someone from India give me the recipe and take me through it step by step, while I made it. Took about 2 1/2 hours.. but it turned out SO good! It was better than I thought it would be. Before I could even start.. I had to shop for ingredients I don't normally use.

Heat it slowly so that the mayo doesnt break down as easily.
