ive recently purchased a toshiba hd e1 dvd player
i also own a sony dav dz111 dvd that i use for sound for my projector.
if i link the toshiba to the sony with the aux red /white cable will i be able to get 5.1 surround sound from my sony as it contains a digital sound decoder?

No.

The Red/White cables (and the jacks) are for L/R Analog audio. This cannot carry DD5.1 signals.

You need a "Toslink" or "Coaxial Digital" input on the receiver to feed it from another device.

The Red/White cables WILL be able to feed ProLogic signals to the Sony, but not DD.
