Beef Bourguignon
6 oz of blanched bacon
2 to 3 Tbsp cooking oil
4 lbs trimmed beef chuck, cut into 2-inch cubes
Salt and freshly ground pepper
2 cups sliced onions
1 cup sliced carrots
1 bottle of red wine (such as a zinfandel or Chianti)
2 cups beef stock or canned beef broth
1 cup chopped tomatoes, fresh or canned
1 medium herb bouquet (tie 8 parsley sprigs, 1 large bay leaf, 1 tsp dried thyme, 2 whole cloves or allspice berries, and 3 large cloves of smashed garlic together in cheesecloth)
Beurre manié for the sauce: 3 Tbsp flour blended to a pasted with 2 Tbsp butter
For the garnish: 24 small brown-braised white onions and 3 cups sautéed quartered mushrooms (sautéed in butter and oil, start with at least 4 cups of raw quartered mushrooms, about 1 lb and a half)
1 Blanch the bacon to remove its smoky taste. Drop bacon slices into 2 quarts of cold water, bring to a boil, and simmer 6 to 8 minutes. Drain, rinse in cold water, and dry on paper towels.
2 In a large frying pan, sauté the blanched bacon to brown slightly in a little oil; set them aside and add later to simmer with the beef, using the rendered fat in browning. Brown the chunks of beef on all sides in the bacon fat and oil, season with salt and pepper, and turn them into a heavy casserole pan. Add the bacon to the casserole pan as well.
3 Remove all but a little fat from the frying pan, add the sliced vegetables and brown them, and add to the meat. Deglaze the pan with wine, pouring it into the casserole along with enough stock to almost cover the meat. Stir in the tomatoes and add the herb bouquet. Bring to a simmer, cover, and simmer slowly on the lowest heat possible, either on the stove or in a preheated 325°F oven, until the meat is tender. Check at about 40 minutes.
4 Remove all solids from the sauce (except the beef) by draining through a colander set over a saucepan. Return the beef to the casserole. Press juices out of the residue into the cooking liquid, then degrease and boil down the liquid to 3 cups. Off heat, whisk in the beurre manié, then simmer for 2 minutes as the sauce thickens lightly. Correct seasoning and pour over the meat, folding in the onions and mushrooms. To serve, bring to a simmer, basting meat and vegetables with the sauce for several minutes until hot throughout.
Serve with rice, bread, or potatoes (unless you are doing the low-carb version!).

Buy a package of chicken thighs and bottle of Kikkoman teriyaki sauce (the thin kind, not the thick baste and glaze kind).
Put the chicken skin side down in a glass baking dish. Pour on some of the sauce, enough to come a little ways up the side of the chicken. You definitely want the bottom of the pan well covered with it. Bake at 350º for 1/2 hour, turn chicken skin side up and bake another 1/2 hour.
When you turn the chicken over, start a pot of white rice. It will finish about the same time as the chicken.
I like this with a green veg like zucchini, broccoli or green beans. Or a salad.

Meatloaf is one of my favorite recipes that has been passed down - served with mashed potatoes and whole green beans or steamed baby carrots.
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand
Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

Chicken Breast Parmesan
To keep this dish low in sodium, use a low-salt spaghetti sauce or make your own homemade without any added salt.
Serving: 2
Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes
1 boneless skinless whole chicken breast, cut in half
1/3 cup seasoned Italian bread crumbs
1 tablespoon Parmesan cheese
1 cup spaghetti sauce
2 slices low-fat mozzarella cheese
. Rinse chicken with water, and coat with bread crumbs and Parmesan cheese.
2. Place in glass microwavable dish, and cover with wax paper.
3. Microwave for 7 minutes on high.
4. Remove; pour spaghetti sauce over chicken and top with mozzarella cheese.
5. Microwave another 3-4 minutes. Enjoy!
Based on individual serving.

Here is a easy recipe.
Hobo Dinner packets
4 medium potatoes, washed
1 lb baby carrots
1 small onion
4 hamburger patties
Olive oil
Butter or margarine
Seasoning salt.
Pepper
8Tbsp. water or beef broth
Directions
Cut four large pieces of foil, large enough to wrap and seal each individual dinner.
Place hamburger patty in center of foil and sprinkle with seasoning salt and pepper.
Peel potatoes if desired, place one potato, cut into 8 pieces, ¼ of baby carrots, ¼ of onion on top of each patty.
Spritz with olive oil. Dot veggies with margarine or butter as desired.
Sprinkle with seasoning salt and pepper to desired taste.
As each meal is being wrapped, add one Tbsp of water or beef broth. Seal.
Bake on medium-hot grill or in camp fire for up to 1 hour. (Check after 30 minutes for desired tenderness.)
Remove from heat and allow to stand for 5 minutes before serving.
Can be eaten right out of the foil.
NOTE: Can be baked in oven at 375F for 45-60 minutes. (Check for tenderness after 45 minutes.)
You can add more veggies as desired but cooking time should be lengthened.
If you add more patties to each packet, allow extra time for cooking, especially if they are still frozen.

this is extremely easy. You can bake it or grill it your choice.
mix butter and minced or chopped garlic. can also substitute garlic powder. salt and pepper if you like. put chicken breast on grill or in baking pan. top with a slice of lemon and sprinkle italian seasoning. taste great and is very simple!
serve with potatoes roasted with corn onions and garlic.
