Yes, go ahead and freeze them. They'll be fine. But you have to thaw out the whole package to use any of it. Portion it up first and repackage in ziplocks. I've frozen deli ham slices, deli chicken slices, and deli turkey slices. Even salami and pepperoni. It's great for emergencies.

RE:
Can you freeze cold cuts?
My date listened to well when I said I needed meat and bought me all sorts of cold cuts... all white meats, how do they freeze? Do they thaw mushy? Do they pick up odd flavor? or do the freeze well and thaw like nothing happened?? Will it get tough? (they are in their original puff, air tight...

I do this all the time, especially with Prosciutto (Italian Parma Ham) as I can't use the entire container. I place INDIVIDUAL portions on waxed paper or cling film, place in a freezer food storage bag, then freeze quickly on a baking sheet in the freezer. When defrosting, DO IT OVERNIGHT IN THE REFRIGERATOR, and you'lll get the best results. Freezing high fat meats such as sausages, do the same process, and defrost overnight in the fridge.....Gradual defrosting is the trick/key to keeping the same taste/consistency in the finished product. Freezing also is a great way to save, buying in bulk and then freezing the item(s) and defrosting them as needed.......Enjoy and Happy Holidays!!!!!! Christopher EDIT: Thanks Myra.........You're NOT too old, trust me......Yahoo Answers makes the "asker" of the question wait a minimum of 4 hours before you can choose best answer......I'm glad I helped you to solve your cold cuts dilemma.....any other culinary questions, you know where to find me!!! Sounds as if you did good, he listen and you got, freeze them and they will do great. Pull them out later to have a special date with them they heard you, in my book that means you came out on top and owe them. If not, food for one of those rainy days.

no they do not thaw mushy. Leave them in the original packaging then put them in a freezer bag make sure and squeeze all the air out of the bag before you seal it shut. I have been a cook for 28 years.

I have tried several time to freeze deli meats. When they unthaw they seem to be very watery and tasteless. But that is just me.
