God has done and said so many things in Symbolism.

I find it hard to believe that he would "punish" us.

Is it possible that this is just another form of symbolism?

Perhaps we are headed for death, and nothing beyond that, should we not choose to go onwards?

That sounds more like the God I believe in.

No, Hell is a very real place.

You've just created a God in your mind that will suit your subjective morality. I'm afraid that's called idolatry.

You've created your own version of God and as another has already mentioned, that's idolatry.
Just because you find it hard to believe He would punish us for our sins doesn't mean that He won't. That's the same reasoning my 5 year old uses when he's punished for misbehaving.

Nothing beyond death= nothingness. Deal with it. There is no hell or heaven, and hell is not nothing...
So what is your question?
