Bullet trains..ha. We're not France.
Do the Amtrak. If you're by yourself, it's well worth it to splurge the extra 20 bucks or so and get the first class seat. It's nice.
If you're with a buddy, it's REALLY REALLY nice to get one of the Roomettes on the sleeper car. Looks expensive, yeah, but you get a free meal out of it too. And train food is good--much better than plane food. (Can you even GET plane food anymore? I've never seen it on any flights I've taken.)
Other than that, your best bet is the airplane. Cram your stuff into a carryon and pick an airline--they all have 8 to 15 flights from NYC to Chicago daily.
The only nice thing about coming into Chicago on Amtrak is you're already downtown when you get there--you don't have to take the El from O'Hare to get downtown.

Unless you've got friends on the freight trains, Amtrak is the only passenger train in the US.

Both about the same time.
Bullet trains? Not here. the high speed service is between Washington and Boston.
