You have a vaccuum leak somewhere....
The heater controls use a vaccuum switch to switch from defrost to another setting. if there is a vaccuum leak, then the switch can't get enough vaccuum to switch over.

I'm going to disagree with the first answer.
You could have something jammed in your duct work (Mouse nest probably) which is keeping your blend door from operating, or you may need a new 'blend door control cable'. You can purchase one for about $10.00 from a jeep dealer or a jeep specialty on-line store.

I am going to agree with the vacuum leak, its a pretty common problem. I believe the vacuum canister (ball shaped usually) is located behind the bumper on the passenger side.

The other answer is absolutely correct, look for a loose vacum hose on the intake manifold. Mine does it occasionally as well.
Plug the leak and all is well.
