I bought a can of Sweet Potatoes a few days ago, and still haven't figured out what to make with them, tonight I want to make something quick but tasty for dinner with this one can(29 oz) of sweet potatoes, any quick ideas? thanks!
Also, since there's not alot, u can clue me in on something to go wit them...any ideas...thanks

Pork Chops with Mashed Sweet Potatoes and Onions
Servings: Serves 4.

Ingredients:
Sauce
2 tablespoons olive oil
4 pounds meaty neck bones, cut into 2-inch pieces
2 onions, sliced
4 cups canned low-salt chicken broth
2 cups canned beef broth
8 large garlic cloves, halved
6 fresh thyme sprigs

Sweet Potatoes
2 large tan-skinned sweet potatoes (about 1 3/4 pounds), peeled, cut into 1/2-inch-thick rounds
3 tablespoons butter
1 onion, sliced
2 teaspoons minced fresh thyme
Pinch of ground cloves

8 3- to 4-ounce pork chops (about 1 inch thick)
2 tablespoons (about) olive oil

Fresh thyme sprigs

Preparation
For sauce:
Heat oil in heavy large Dutch oven over high heat. Working in batches, add meaty bones; sauté until well browned, stirring often, about 10 minutes. Transfer bones to platter. Add onion and sauté until brown, about 12 minutes. Return bones to Dutch oven. Add both broths, garlic and thyme and bring to boil. Reduce heat, partially cover Dutch oven and simmer 2 hours.
Strain sauce into heavy small saucepan, pressing hard on solids to release liquid. Discard solids. Boil sauce until reduced to 2/3 cup, about 20 minutes. Spoon fat off surface. Set sauce aside.

For Sweet Potatoes:
Cook sweet potatoes in large pot of boiling salted water until tender, about 13 minutes. Drain. Melt butter in heavy medium skillet over medium-high heat. Add onion and minced thyme and sauté until onion is golden brown, about 10 minutes. Transfer sweet potatoes and onion mixture to processor and puree until almost smooth. Stir in cloves. Season with salt and pepper. (Sauce and sweet potatoes can be prepared 1 day ahead. Cover separately and chill.)

Season pork with salt and pepper. Heat 1 tablespoon oil in large skillet over high heat. Working in batches, add pork; cook to desired doneness, adding more oil to skillet as necessary, about 4 minutes per side for medium-rare.

Meanwhile, bring sauce to simmer. Rewarm sweet potatoes in medium skillet over low heat, stirring often.

Place large spoonful of potatoes in center of each of 4 plates. Top each with 2 chops. Spoon sauce over. Garnish with thyme sprigs.

Sweet Potato and Apricot Puree with Pecan Streusel
Servings: Serves 6 to 8.

Ingredients:
5 large sweet potatoes (about 3 1/2 pounds)
6 ounces dried apricots (about 1 1/2 cups)
1 tablespoon granulated sugar, or to taste
1 tablespoon all-purpose flour
1/3 cup firmly packed light brown sugar
1 tablespoon unsalted butter, softened
2/3 cup chopped pecans (about 3 ounces), toasted lightly

Preparation:
Preheat oven to 450°F.
Prick potatoes and bake in middle of oven 1 1/2 hours, or until very soft. Scoop flesh into a bowl.

In a saucepan cover apricots by 1 inch with cold water and simmer until soft, about 30 minutes. Reserve 2 tablespoons cooking liquid and drain apricots. In a food processor puree apricots with granulated sugar and reserved liquid until smooth.

Add puree to potatoes with salt to taste and with an electric mixer beat until smooth. Spread mixture in a buttered 2-quart shallow baking dish. Puree may be prepared up to this point 1 day ahead and chilled, covered.

Reduce oven temperature to 400°F.

In a small bowl blend with your fingers flour, brown sugar, butter, pecans, and salt to taste until combined well and crumble over puree. Bake puree in middle of oven until heated through and steusel is bubbling, about 15 minutes.

Note:
Since using canned sweet potatoes the steps can be reduced, but the results will be the same.

Sweet potatos are very much like pumpkin, which can be mixed with broth and cream to make a wonderful soup! If the sweet potatos are supposed to be the main attraction, perhaps you'll want to consider the following:

1. Sweet potato soup, warm bread and butter, cheese and grapes.
2. Roasted sweet potatos with brown sugar, nuts, and ginger/nutmeg. Add baked or roasted chicken, green beans and something great for dessert for a complete meal.
3. Saute your sweet potatoes with sliced onion until carmelized. Season with ginger, salt, pepper and thyme. Add 1 T brown sugar. Toss with hot pasta and some grated parmesan cheese.
4. Sweet potato quiche: mash up the sweet potatos, add eggs and milk, salt, pepper, onion, chopped bacon (cooked) and pour into crust. Bake until center doesn't jiggle.

If you eat pork then pork chops if not fried chicken is the way to go. As for the sweet potatoes drain them , put them in a baking dish or microwave safe bowl with some butter,cinnamon and a little brown sugar. You can also put marshmallows on top of them and heat until melted. My kids eat sweet potatoes all the time and this is the way they eat them. :)

Sweet potatoes goes with a few things. If you want to doctor them up a bit you can do like the one said, with the brown sugar and cinnamon. To go WITH the potatoes, the pork chops or pork roast goes well and a veggie.

Or a nice ham steak, with either mashed potatoes and gravy or mac-n-cheese and a veggie.

Or sliced turkey and gravy with stuffing or mashed potatoes and a veggie.

LOL Can NOT forget the veggies! ( spinach, asparagus, green beans, beets, broccoli or a nice mix of non-starchy veggies)

There are some large, individual, vacuum-packed, ham slices which are really nice .. that would go great with sweet potatoes. All you would have to do is to fry .. or broil .. the ham slices .. and they cook quickly .. and are excellent.

You could add dressing with this. There is a quick dressing in a box.

mashed sweet potatoes is quickest. add butter, brown sugar and some cinnamon with a little milk. if you want to jazz it up a little, add some orange zest. it can go with almost any meat/poultry. serve with a simple salad.

Steam or boil them and toss in some melted butter.
Taste to see it they need any S&P.
