It's a variety of wheat, prepared in a special way (crushed, cooked, etc)... Here we know it as "trigo burgol", and I tasted it recently as part of a Syrian-type dish (can't remember the name) while I was visiting another part of the country.

Tip: if you're looking for English-language information, the name is usually translated as "bulghur" or "burghul" :-)

In English, the word is Bulgar; which is whole wheat, very high in fiber and high in carbohydrates as well. The reason I know, is because I consume Bulgar for Breakfast. The wheat is very hard and has to be softened in some hot water unless a person plans to chew on it all day. Very nutritious. The majority of Americans probably do not know what it is. I also consume Flax seed flour and Wheat Germ too for the same reasons.

Bulghur/Burgol: Wheat that has been crushed, cooked, dried and separated into fine and coarse. "Cracked wheat" is not the same as it has not been cooked

It is used in salads Tabouleh: Fresh finely chopped parsley mixed with burgol (cracked wheat) diced Tomatoes, onions, fresh lemon juice and olive oil. and also with meat and pine nuts. Kibbeh: A deep Fried Blend of ground beef or lamb ,burgol (cracked wheat), stuffed With ground beef or lamb, onions, pine nuts and with special seasonings.

So I was curios. I googled it and I think it is Dutch or something. So from what I gathered , it's shoe polish. :P

burgol is crushed wheat in arabic which they commonly used in tabouleh salad, of chopped parsley, chopped tomatoes, onions, mint, burgol, olive oil, lemon juice.
